New Beginnings

 
 

 
 In the words of  Dr. Dre, "today was a good day".
Today was my first day at my new job. Every thing went really well, just as I imagined it would.
 
 At the end of last year I started to brainstorm on what I wanted to accomplish in 2013
A major thing that I wanted to change was my career.  I worked in the same position for 5 years and I wasn't happy.  I wanted more.  I needed more.
The lawd answered my prayers and granted me with a new career opportunity and I couldn't be happier.  The biggest thing that I realized was that I underestimated my worth.  I was complacent.
It sucks that it took me this long to come to my senses, but I'm happy. Really happy.

So this is the big news that I wanted to share with you guys.

Buckwheat Strawberry and Banana Pancakes

Currently, my favorite meal of the day is breakfast. I crave egg whites, bacon, grits, and PANCAKES on the regular. Last month, my favorite thing was a chicken burrito.   Here is one of my healthy pancake creations....... 
{one yolk and three egg whites, just in case you were wondering}

I must say that these pancakes were off the chain!  I would eat them every morning if
I had the extra time to prepare them. They might just motivate me to wake up  earlier in the morning (key word, "might"). I'm sure that my guy would love it if I made pancakes everyday.

 

  • 1 cup buckwheat flour
  • 1 tsp baking powder
  • 2 Tbsp of organic honey
  • 1/2 cup mashed bananas
  • 1 egg, beaten
  • 1 cup almond milk
  • 2 Tbsp EVOO
  • Topped with Carys Sugar Free Syrup and strawberry & banana slices.

    Hi Y'all.....

    Happy Sunday folks! 
    I came down with the stomach flu y'all.  I am so upset because I was supposed
    to have my cheat meal on Saturday (#fitgirlproblems).
    I was planning all week to have pizza and beer at Mellow Mushroom, but instead I spent
    the night in the bathroom throwing up (I know, tmi).  We did get some snow yesterday here in the Carolina's....... at least I had something pretty to look at while I was in bed sick. 
    On a better note, I am feeling way better now.  
    Other than my 24 hr. flu bug, I had a great weekend.  I got to spend some time with my little bro before heads back to Switzerland tomorrow.  I also watched the Beyonce documentary on HBO which rocked my world.  I love Bey...she is so real.  She filmed the whole dang interview
    with no make-up and looked fabulous. I want skin like hers.  I'm calling my dermatologist tomorrow.
    Have a good night friends...I'm off to watch some reality TV and fold laundry.

    Happy Valentine's Day!!



    Happy Valentine's Day!  I hope that everyone is enjoying their day.
    I'm actually spending the week at home with my parentals and siblings.  My brother is visiting from Switzerland and I'm so pumped to spend some quality time with him.
     
    I love making homemade Valentine's Day cards and eating all of the yummy candy. 
    I am proud of myself because I have only had one mini bag of M&M's and Skittles today (that's a good thing because I normally eat a ton of candy).
      I'm out of town so me and my boo are not celebrating until the weekend.
     
    This week has been absolutely AMAZING! God has finally answered my prayers. I will tell you more about it on Monday.

    My Life on Instagram


    I'm proud of myself because I have been really consistent with my workouts for the past few weeks.  While most people are trying to lose weight, I am trying to put on a few pounds (pounds of muscle). I want  to get a head start because Spring is just around the corner. I don't want to be thick in the waist and sad in the face!
    I recently started laser hair removal and I am surprised that it barely hurt.  For some reason I was thinking that the pain would be unbearable.  I will say that laser hair removal is expensive but It will all be worth it once summer rolls around.  It will be a joy to not have to shave.

    Only in the South.....

    I woke up this morning to a lovely protein-packed breakfast.  I love visiting my parents because my mom always makes me breakfast (one of my many reasons why I enjoy visiting my family).
     
    Funny story.....I was at the grocery store yesterday with my mom and sister.  We were standing in the meat section and the butcher Roger came out to organize the meat.  Roger (an older white male)  greeted us and asked what we were going to cook for the Superbowl.    My mom said that she was going to make chicken wings (typical, lol).  Roger told us that he was going to make meat balls. 
    We all carried on a conversation for a while.
    Roger then asked if "we ever get to go home much?"
    We (my mom, sister, and myself) all looked at each other confused because we didn't understand what Roger meant by "home".
    Roger could tell that we were confused so he asked again..."do you guys ever get to go back home to AFRICA often?"......... *crickets*  we remained silent for a while because it was weird that a Southern white male automatically assumed that we were from Africa *side eye*
    My family is African American.......
    Maybe Roger was a little naive or maybe we resembled someone  that he knew from Africa....who knows.  It was funny and offensive at the same time. 
    I told my sister that she should take off her shoes and carry our grocery basket on her head around the grocery store.  I'm sure that Roger would get a kick out of that.
     
     
     
    Moving on...I hope that everyone is having a great Superbowl Sunday.  I can't wait to see my girl Bey (Beyonce) throw down during half time.  I bet $20 on the game so I am hoping to win some mula because mama needs a new pair of shoes.

    Working Up a Sweat....



    Working out at home is probably the only cool thing about being home alone for a week (the beau is out of town on business).  I love moving all of the furniture to one side of the living room and pulling out my yoga mat for a mini workout session.  In this photo I am working on my push-up.  Back in the day, I could bang out 50 plus push-ups in a row BUT times have really changed.  I am working hard to be able to lift my own body weight again.  Pull-ups, dips, and push-ups are my main focus right now.  If you look closely you can see my new highlights.  I would love to go Beyonce Blonde for the summer, but I don't want to damage my hair. What do you think, light or dark?



    This is totally off topic, but I have been thinking a lot about taking more risks and doing more things outside of my comfort zone.  I am totally one those people who always plays it safe in life.  I usually shy away from things if the end result is uncertain. For example, I have a ton of awesome business ideas but I have yet to try any of them because I am afraid that the end result won't be good. I would love to make a career out of my hobbies, but  it's almost like the uncertainty has hindered me from even trying. This is truly something that I want to change in my life, but I'm struggling because I don't know where to start.  I guess I need to learn that it's okay to fail.
