Tonight I made a Stir Fry for dinner!
I made the meal healthy, but it turned out to be super flavorsome even though I
left out a ton of ingredients ( in an attempt to cut down on calories). Somtimes, I find that some meals don't taste as good when you try to make them healthy BUT this one did not disappoint.
I traded in my Extra Virgin Olive Oil for Coconut Oil. For the most part I
couldn't taste the difference BUT I was told that Spectrum makes
a tasteless Coconut Oil for all of you that hate the taste of coconut.

| {I purchased ALL of the ingredients at Trader Joe's} I also use coconut oil once a week for a hot oil treatment for my hair (I have a separate jar that I use for my hair and body, lol). |
Ingredients:
Steak
Pork Tenderloin
Coconut Oil
Frozen Stir Fry Veggies
Island Soyaki
3/4 Yellow Onion Sliced
Crushed Red Pepper
Brown Rice Lo-mein Noodles
2 whole eggs Scrambled

I cooked enough to take for lunch for a couple of days, but I'm thinking about substituting
quinoa instead of the Lo-mein Noodles.

Nice to see I'm not the only one with an addiction to Trader Joe's! Eyeballing that coconut oil as I must try it...seems that stuff has 101 uses!
