Yesterday I decided to take the night off from the gym to rest my super sore limbs. Because I didn't workout I wanted to make something healthy for dinner. This Grilled Chicken&Walnut Salad was the bomb dot com and I'm not just saying that because I made it....it was really, REALLY delicious. As you can see I'm addicted to grape tomatoes....I usually find a way to add them to EVERY meal.
I finally got to use my new salad spinner from Pampered Chef...talk about a good time,ha!
Chicken: seasoned chicken with steak seasoning (don't knock it before you try it) and then pan-seared in EVOO.
Salad Mixture: Roman lettuce and spinach
Dressing: Balsamic Vinaigrette
finish off with grape tomatoes and chopped walnuts.
