Spinach & Tomato Chicken Casserole
I whipped up this dish from scratch and it turned out delicious.
Ingredients:
4 Boneless skinless chicken breast
4 diced Pearl Tomatoes
Yellow onion
red pepper
1 tbsp Crushed Garlic
1 cup Free-range Chicken Broth
1/2 cup of spinach
mini potatoes
salt & pepper
2 tbsp of olive oil

I just had a fantastic workout!!! Today AI (my friend) and myself worked out our back and did a light leg workout. We finished off our workout with a 10 minute Ab routine (including planks).

Semi- Healthy Pizza
Today I was craving pizza so I opted for a healthier version. I added tons of veggies. I'm sure that the fat content is still a little high but it's okay to splurge sometimes.

Pumpkin Spice Muffins
This weekend I was feeling like Suzy Homemaker so i decided to make a lavish Saturday morning brunch with Pumpkin muffins. Now I'm not a baker but i figured that I would start out with a box and later move on to something a little more difficult. The problem that I have with baking is that i always cook whatever I'm baking way too long. For instance, the box told me to cook the pumpkin muffin's about 18-20 minutes. Now i didn't want to burn the little things so I decided to cook the first batch for 17 minutes. Turns out 17 minutes was way too long because the bottoms of the muffins where a tad bit crispy. The second batch i cook about 15 minutes and they turned out perfect. I hope y'all are not laughing at me. I know that box muffin's are not anything to brag about but I'm proud of myself ! HA HA. Let's just say that CJ enjoyed them!!
