
Today after work I meet up with one of my best friends for drinks and frozen ice cream, I know that it's a weird combination but it was delicious! I wonder when my obesssion with Frozen Icecream is going to end.....In my mind I think that I can eat as much as I want because it's "fat-free". I'm sure that it will catch up with me sooner than later.
I made stuffed peppers for the first time tonight and BAM, they were finger-licking good! Here is the recipe if you want to make some of your own
Ingredients4 bell peppers, any color
Salt
5 Tbsp extra-virgin olive oil
1 medium yellow onion, peeled and chopped
1 clove of garlic, peeled and chopped
1 lb of lean ground beef
1 1/2 cup of cooked rice
1 cup chopped tomatoes, fresh or canned (if using can, drain of excess liquid first)
1 tbsp chopped fresh oregano or 1 teaspoon of dried oregano
Fresh ground pepper
1/2 cup ketchup
1/2 tsp of Worcestershire Sauce
Dash of Tabasco sauce
